Tasting Notes
The estate came into being back in 1956, but it wasn’t until the 1980’s when the vineyards were all converted to Organics, and since then the move to create wines using no chemicals, no commercial yeasts, and with only a small touch of sulphur added (sometimes) during vinification, these are super delicious wines for sure. This is a blend of mostly Grenache Blanc, with an amount of Chardonnay, Rolle, Roussanne & Muscat a Petits Grains thrown into the mix also. The wine saw ageing in a combination of stainless steel & oak for nearly 2 years before being released. This is a wine that truly speaks of the land from which it was made as well as the winemaker who made it. There’s plenty going on in the glass with aromas of lemon zest, green pears, and this wild floral aroma too of hawthorn & acacia too. On the palate, the wine is medium bodied, has a racy acidity and a real pleasantness that just keeps on giving.

Pairing Notes

Poached Corn Fed Chicken, Creamed Parsnip, Smoked Bacon, and Leeks

Due to the medium body of the wine and that it has high acidity, it’s a wine that’s best enjoyed with food. We love the texture of wine pairing well with the parsnips and the acidity acting as a nice balance with the bacon and leeks.
