The candidate would ideally have a strong background in high quality restaurants ideally. Be creative, flexible and have a can do attitude along with having an obsessive passion for food. Be structured and incredibly organised. Above all to embrace our ethos and believe in our principles.

Scope and purpose of job

Working within a team of commis waiters to help organise areas of the service from the kitchen to the floor. You will be trained in all aspects of the restaurant from wine, coffee, food and service standards. To maintain excellent service standards on the restaurant floor whilst working with others to do the same. Assisting the management team in implementing development changes within the restaurant.

Specific job accountabilities

Maintaining customer focused service principles throughout L’Enclume. Understanding the system of food service from the Kitchen. Have a good understanding of the crockery and equipment required to perform each service. Take a professional interest in the food and wine service. Being a perfect example of the L’Enclume standards throughout all manner of work.

The Commis Waiter is expected to understand various areas of the operation Ensure that the Commis station is always set up according to relevant levels of business. Understand the way to delegate and be delegated to for the opening duties of the day to ensure the restaurant is ready for service. Have an understanding of the relevant dietary requirements of guests and the implications on the menu. To ensure that stations have their correct mis-en-place. To ensure that tables are set correctly according to the table plan and are impeccable in every aspect. To ensure that the service standards set by the Restaurant Manager are met throughout the team. Assist in the liaising between departments to ensure smooth communication and interdepartmental relationships.
