The candidate would ideally have a strong background in fine dining restaurants. Be creative, flexible and have a can do attitude along with having an obsessive passion for food. Be structured and incredibly organised. Above all to embrace our ethos and believe in our principles.


To maintain excellent service standards in the restaurant floor whilst understanding the high standards need throughout all aspects of the set-up and service.


  • Maintaining customer focused service principles throughout.
  • Ensure that the Commis station is always set up according to relevant levels of business.
  • Have an understanding of the relevant dietary requirements of guests and the implications on the menu.
  • To ensure that stations have their correct mis-en-place.
  • To ensure that tables are set correctly according to the table plan and are impeccable in every aspect.
  • To ensure that the service standards set by the Restaurant Manager are met.
  • To ensure that the high standards of service and operation set by the Restaurant Manager are followed and applied all times.
  • Positively dealing with and learning from customer complaints and comments.
  • Engaging in a polite and personable manner during any guest interaction.
