Gabrielskloof 'Landscape Series' Cabernet Franc - a terroir-focused series of wines from Overberg in South Africa, the estate was founded with the desire to find a unique piece of land, so that the owner could be 'rooted to the spot', so a series focused on individual landscapes and terroirs was the logical next step. This Cabernet Franc shows notes of plush dark blackberries and plums, with a subtle, pea-shoot and bell-pepper herbaceous note- which helps us elevate the vegetal accompaniments to our Beef, whilst still possessing the structure and power to melt through our rich and tender Short Rib.

Philippe & Catherine Delesvaux 'Passerilé' Chenin Blanc- A wonderful example of Coteaux du Layon from the now sadly retired Delesvaux family, based in the Loire Valley. Made exclusively with the Chenin Blanc grape variety and showing those classic notes of rich quince and yellow apple, with luscious hints of honey and beeswax, all the while still possessing the taut acidity that has made Chenin's reputation the world over. We felt that said acidity was perfect at matching the subtle, saline flavours of our miso caramel, whilst still possessing the richness and sugar content needed to stand up to our caramelised apple tart,
