The Baker & The Bottleman

Hong Kong

The Baker & The Bottleman

Hong Kong

Sustainable modern bakery by day, natural wine bar by night.

“We are advocating traditional baking techniques that have been around for hundreds of years, as well as low-intervention wine-making. We aim to serve natural ingredients within a fun and modern space that caters perfectly to the metropolitan lifestyle – for the forward-thinkers who are ready to set an example and make a change.” says Chef Simon Rogan

True to our ethos, sustainability is at the very heart of the concept - our bakers and chefs produce all the food from scratch in-house, observe the seasons and work with only the best local suppliers. We use traditional artisanal techniques and flavours giving a strong British heritage to each baked item.

In the evening, our upstairs space transforms into a casual wine bar serving natural wines alongside snacks, cold cuts and cheese. An ideal setting to raise a glass of good wine, whilst enjoying a snack and sharing plates with family, friends or work colleagues.

L'Enclume is Simon Rogan's flagship restaurant, located in the Lake District village of Cartmel, situated in a former 13th-century blacksmith's workshop with riverside views.

Known for its farm-to-table philosophy and use of hyper-seasonal produce, most of the ingredients are grown on Simon's own farm in the Cartmel Valley, Our Farm. Simon started Our Farm in 2009, with the aim of strengthening the link between our food, its development and the environment, and further develop the relationship between cooking and growing.

The tasting menu at L'Enclume, overseen by head chef Paul Burgalières, is ever-evolving and provides a truly traceable dining experience. Guests can expect the best seasonal and local ingredients to be handled with passion and creativity.

The restaurant has a total of 16 bedrooms, which are dotted around the village and have been individually designed to honour their historic surroundings.

Simon Rogan opened Roganic Hong Kong in the Causeway Bay district in February 2019. The restaurant sits alongside Aulis, Simon’s award-winning 12-seater chef’s table, and features multifunctional private dining rooms and Roganic’s destination bar.

With a focus on local and sustainable ingredients, Roganic Hong Kong presents a city-centric take on a farm-to-table dining experience. It carries over elements of Simon’s three-Michelin-starred L’Enclume, with dishes that adapt to the local palate in new and exciting ways.

As with all of Simon’s restaurants, there is an ultimate commitment to provenance and traceability of the ingredients; each dish utilises produce sourced from local, organic farms in the New Territories.

In 2020 Roganic Hong Kong was awarded a Michelin star less than ten months after opening and has since been recognised with a Michelin Green Star award by Michelin Guide Hong Kong Macau 2021. Roganic Hong Kong is the only restaurant in Hong Kong to receive this prestigious accolade, highlighting it as a leader in restaurant sustainability. Simon is currently the only international chef who holds this award across two restaurants (Roganic Hong Kong and L’Enclume in Cartmel, UK).
