This marks a compelling new chapter as Simon brings his celebrated produce-led philosophy to one of tennis's most prestigious Grand Slam tournaments. Guests at Club 1905 will experience his exceptional cuisine, showcasing his pioneering approach to contemporary British cooking, in opulent surroundings, all while enjoying unmatched seats at Rod Laver Arena for every thrilling moment of the action - from the first round through to the finals.

This collaboration represents the pinnacle of Grand Slam luxury: Michelin-starred cooking paired with premium wines and the electric atmosphere of the Australian Open.

Aulis London x Kitchen Table: Unpredictable Coupling Cocktail Lounge Event

On Tuesday 3rd February, Aulis London's restaurant manager and sommelier, Charles Carron Brown, is heading to Kitchen Table in Fitzrovia to host a collaborative cocktail event.

Titled the “unpredictable coupling”, where Charles and Kitchen Table's Bar Manager, Amine Azil, will each create two cocktails with unique ingredients and flavouring combinations whilst staying true to both of their ethos of British seasonality and sustainability.

From Tuesday 3rd to Saturday 7th March, our head chef, Tom, will be joined by Simon, and they have both invited several familiar faces from Rogan & Co’s past. Previous head chefs, front-of-house superstars, and long-standing team members will come together to bring these dishes to life once again.

Each dish on the menu has been carefully chosen not only for its taste, but also for what it represents. Alongside each dish, we will share the backstory behind it, how it came together, why it mattered at the time, and the memories that it evokes.

Aulis London head chef Charlie Tayler has been selected as one of 'The Magnificent Seven' - joining some of Britain's finest chefs for an unforgettable evening at Whatley Manor on April 14th, 2026.

This fundraising dinner supports The Magic Future Foundation's mission to build 100 schools in the world's economically poorest countries. Building on the success of the original Magnificent Seven in 2020, which funded 13 schools and transformed entire communities, all ticket proceeds go directly towards creating lasting educational opportunities.

Aulis Phuket × GOAT | A Michelin Star Collaboration Dinner

Following our successful Bangkok collaboration in August 2025, we're delighted to welcome Michelin-starred and Green-starred GOAT to Aulis Phuket for a special four-hands dinner on Saturday 7 March 2026. Aulis Phuket head chef Charlie Wilson and chef Tan-Parkorn Kosiyabong from GOAT will unite two award-winning kitchens, celebrating exceptional local ingredients.

Bangkok's GOAT is renowned for its Thai-Chinese identity, blending Chinese flavours with European techniques. Both restaurants champion sustainability and local sourcing, working with regional farmers, fishers and artisan producers while growing their own produce.

The collaborative multi-course menu showcases refined technique and produce-led cooking, with optional pairings curated by Arsen Brahaj, winner of the 2026 Michelin Guide Service Award in Thailand.
