Our First Event with Langham

The series opens on 17th July with Langham Estate, a family-run estate set amongst the chalk hills of Dorset.

Specialising in traditional method sparkling wines, its 34-hectare vineyard grows Chardonnay, Pinot Noir and Pinot Meunier grapes using low intervention methods to create balanced wines with a bright acidity created through the distinct chalky soil of the area.

Langham will bring a minimum of six wines, plus a sparkling wine on arrival - including back vintages and rare cuvées - each paired with head chef Charlie Tayler's seasonal tasting menu, with ingredients sourced from Our Farm.

A British Wine Pairing at Aulis

The series comes as part of an increasing focus on British spirits and wines. In 2024, Charles, our restaurant manager and sommelier, transitioned the sparkling wine selection to only feature British producers in favour of Champagne, positioning Aulis London as a forerunner in this decision among Michelin-starred restaurants worldwide.

Following the removal of international sparkling wines from the list, we launched a British wine pairing in May 2026. Charles reworked the primary pairing to include only wines from the UK, creating a fully British dining experience. The current pairing features six producers, including London-based sake producer Kanpai, all of which are marked on the list by their distance from Aulis London. The pairing will rotate regularly to reflect the growing number of British wines that are on the restaurant’s list.
