Valentin Mouillard Places 14th in Harpers Top 50 Sommeliers 2025 listing
We are immensely proud of Valentin Mouillard, head sommelier for Umbel Restaurants, for placing 14th in the Harpers Food & Wine Top 50 Sommeliers 2025 listing, which celebrates the very best sommeliers in the UK restaurant world.
Valentin joined L'Enclume as a commis sommelier in 2016, following hospitality school and working in France, and rose to head sommelier three years later. His expertise was further recognised in 2024 when he received the prestigious Michelin Sommelier Award from the Great Britain & Ireland Michelin Guide.
The Harpers Food & Wine judging considers nominees' education, experience, communication, innovation, and leadership - qualities Valentin has demonstrated throughout his career. Under his stewardship, the wine lists at all Simon's restaurants showcase the diversity of the wine world, incorporate traditional as well as experimental varieties, and prioritise small-scale, sustainable winemakers who align with Simon's environmental ethos.
