
'An Ode to Mould' - Mark's Great British Menu Dessert
Earlier this year, Henrock launched three new menus featuring a few of their head chef Mark McCabe's dishes from this year's Great British Menu, inspired by various influential Scottish figures.
Mark's ‘An Ode To Mould’ celebrates Alexander Fleming's accidental discovery of penicillin through an inventive dessert. Rose geranium and amazake ice cream are topped with crystallised grains, sake-poached pear, and miso caramel, while a pear jelly mimics the petri dishes where Fleming first spotted the life-saving mould.
The koji-infused rice pudding, dusted with dried rose geranium, showcases how beneficial moulds transform simple ingredients into complex flavours. It's a playful tribute to how Fleming's holiday mishap led to a discovery that has saved over 200 million lives.
