Simon Talks to Root + Bone
Earlier this year Simon had the pleasure of recording an episode for the Root + Bone podcast with Tim Wild. Together, they cooked up a potato-ferment flatbread with cod’s roe emulsion, cured egg yolk, ponzu sauce and micro herbs at Aulis London.
